Quick Vegetable Pulao

A fragrant one-pot rice with whole spices and mixed veg — ready before the table is set.

Ingredients

  • 1.5 cups basmati rice, soaked 20 mins
  • 2 cups mixed vegetables
  • 1 onion, sliced
  • 2 tbsp ghee or oil
  • 1 bay leaf, 4 cloves, 1 cinnamon stick
  • 1 tsp cumin seeds
  • 3 cups water, salt to taste

Method

  1. 1 Heat ghee and fry the whole spices and cumin until aromatic.
  2. 2 Add onions and cook until soft, then the vegetables and a pinch of salt.
  3. 3 Stir in the drained rice, add water and salt, and bring to a boil.
  4. 4 Cover and cook on low 12–15 mins. Rest 5 mins, fluff, and serve.
