Quick Vegetable Pulao
A fragrant one-pot rice with whole spices and mixed veg — ready before the table is set.
Ingredients
- • 1.5 cups basmati rice, soaked 20 mins
- • 2 cups mixed vegetables
- • 1 onion, sliced
- • 2 tbsp ghee or oil
- • 1 bay leaf, 4 cloves, 1 cinnamon stick
- • 1 tsp cumin seeds
- • 3 cups water, salt to taste
Method
- 1 Heat ghee and fry the whole spices and cumin until aromatic.
- 2 Add onions and cook until soft, then the vegetables and a pinch of salt.
- 3 Stir in the drained rice, add water and salt, and bring to a boil.
- 4 Cover and cook on low 12–15 mins. Rest 5 mins, fluff, and serve.
